Ingredients
- 1 tbsp. olive oil
- Taco seasoning mix (salt reduced)
- 8 small tacos
- 1 medium red onion, finely chopped
- 400g turkey lean mince
- ½ cup low-fat grated tasty cheese
- 400g can crushed tomatoes
- 125g can corn kernels
- 2 cups shredded iceberg lettuce
- 2 carrots, peeled, grated
- 4 small tomatoes, finely chopped
Method
1.
Preheat oven to 180°C/160°C fan-forced. Heat oil in a frying pan over medium heat. Add onion and garlic. Cook for 3-4 mins or until tender.

Increase heat to medium-high. Add mince. Cook, stirring with a wooden spoon to break up mince, for 5-6mins or until browned.

Add seasoning mix. Add canned tomatoes and corn.

Bring to the boil. Reduce heat to medium-low.

Cook for 10 mins or until mixture has thickened.
6.
Bake taco shells for 5 mins or until browned.
7.
Spoon mince mixture into shells. Top with lettuce, carrot, tomato and cheese before serving.
