South West Chicken

• 1 tablespoon vegetable oil

• 4 skinless, boneless chicken breast halves

• 1 (300g) can whole kernel corn, drained

• 1 (425g) can black beans, rinsed and drained

• 1 (283g) can diced tomatoes with green chilli peppers

• 1 pinch ground cumin


  1. In a large skillet, heat oil over medium-high heat.
  2. Brown chicken breasts on both sides.
  3. Add tomatoes with green chilli peppers, beans and corn.
  4. Reduce heat and let simmer for 25 to 30 minutes or until chicken is cooked through and juices run clear.
  5. Add a dash of cumin and serve.
