Ingredients
- 1 1/4 cup rolled oats
- 1/4 cup chia seeds
- 1 1/2 tbsp psyllium husk
- 1/4 tsp vanilla essence (optional)
- 2 cups milk of choice
- 1 tbsp honey
- 2 cups cut up seasonal fruit
- 1/4 cup flakes almonds
- Parmesan to serve
Method
1.
Combine oats, chia seeds, psyllium husk, vanilla, milk and honey in a large bowl. Not to worry! The mixture will be very thin and runny. Allow sitting for 10 minutes to thicken.

Divide mixture into 4 bowls cover and refrigerate overnight.
3.
To serve, top with fruit and a sprinkle of flaked almonds.
