Muffin Frittata

Serves 6

Ingredients:

  • 6 eggs
  • 125 mL milk
  • ¼ Tsp. salt
  • 1/8 Tsp. pepper
  • 250 mL 2 % shredded Cheddar Cheese
  • 175 mL chopped Zucchini
  • 60 mL chopped red capsicum
  • 2 Tbsp. chopped red onion

Directions:

  1. Heat oven to 350°F.
  2. Beat eggs, milk, salt and pepper in medium bowl until blended.
  3. Add cheese, zucchini, capsicum and onion; mix well.
  4. Spoon evenly into 12 greased muffin cups, about 60 mL each.
  5. Bake in 350°F oven until just set, 20 to 22 minutes.
  6. Cool on rack 5 minutes.
  7. Remove from cups; serve.
