- 1 small onion, finely sliced

- 4 medium sized tomatoes, diced
- 200g packet of baby spinach leaves
- ½ tsp. chilli powder

- 1 tbsp. vegetable oil
- ½ tsp. mustard seeds
- ½ tsp. cumin seeds
- 2 tsp. Curry Powder
- 1 clove garlic, crushed

- 200g carton low fat natural yoghurt
- 2 tsp. lemon juice
- ½ tsp. cumin seeds
To Serve
- 2 cups cooked brown rice
- 2 cups steamed vegetables
