Chicken Quesadillas

Serves 4

Ingredients:

  • 500g shredded cooked chicken
  • 125g  drained canned whole kernel corn
  • 125g sliced green onions
  • 125g  drained canned low sodium black beans, rinsed
  • 250g Salsa
  • 250g  2% shredded Cheddar Cheese
  • 8 Whole Wheat  Tortillas

Directions:

  1. Layer chicken, corn, onions, beans, salsa and cheese evenly over one half of each tortilla.
  2. Fold tortillas in half to enclose filling.
  3. Cook one or two quesadillas at a time in large nonstick frying pan on medium-high heat 3 min. on each side or until quesadillas are lightly browned on both sides and cheese is melted.
