Blueberry Oatmeal Muffins

Ingredients:

  • 250ml fat free plain yogurt
  • 250ml old fashioned or quick cooking oats
  • 1 egg or 2 egg whites, slightly beaten
  • 60ml canola oil
  • 125ml packed brown sugar
  • 160ml all purpose flour
  • 160ml whole wheat flour
  • 1 Tsp. baking soda
  • 1 Tsp. ground cinnamon
  • ¼ Tsp. salt
  • 250ml fresh or frozen (do not thaw) blueberries

Directions:

  1. Heat oven 205 degrees C.
  2. Place paper baking cups in 12 regular size muffin cups, or grease bottoms only of muffin cups.
  3. In small bowl, mix yogurt and oats.
  4. In large bowl, mix egg, oil and brown sugar.
  5. Stir in flours, baking soda, cinnamon, salt and yogurt mixture (batter will be lumpy).
  6. Gently stir in blueberries.
  7. Divide batter evenly among muffin cups.
  8. Bake 18 to 20 minutes or until golden brown.
  9. Immediately remove from pan.
